Strawberry Salad

It is strawberry season in Wisconsin! What I buy from the grocery store in January has so little in common with the homegrown strawberries of June that they really should be re-named! Here is the salad that I have been eating every day for the past week.

2 teaspoons strawberry jam (I use Simply Fruit)

1 tablespoon balsamic vinegar

3 tablespoons extra-virgin olive oil

Salt and pepper

Chopped romaine or other greens

Sliced strawberries

Crumbled goat cheese (or feta)

Chopped toasted walnuts

Wisk together the jam, vinegar and oil. Season with salt and pepper. I’ve found this amount of dressing enough for 2 or 3 salads. Toss the greens, strawberries, crumbled cheese and walnuts with the dressing and enjoy.

It’s not strawberry shortcake but it hits the spot!

What is your favorite summer salad?

  1. Love strawberry salad! I do the same thing except with spinach and I throw a chicken breast on top for protein! YUM!

  2. Thanks Dustin! I will make this tomorrow for Dad and me….’course you KNOW that it will be coconut oil and everything room temp. so the oil doesn’t turn into
chunks of fat lol! My friend, Kristy, makes a balsamic vinegar drsg. using stevia-it
is way awesome….but that Simply Fruit would just be like having more strawberries, so why not? Yum! Speaking of coconut oil, Eric, Dustin’s baby bro :), just called from where he is a counselor at a sports’ camp near Estes Park,
asking for more coconut oil….said he has a bunch using it on their skin and eat-
ing it and feeling lots better! Sounds like I had better have one of those gal.
pails from Tracie’s website shipped out to them! 🙂

Happy Fourth, everyone….I am soooo thankful to be an American!!

  3. Sounds great. I also add grapes to mine. I am in LOVE with a spinach and pear salad. I’ll send you the link.

  4. Wow, Angie, that was a winner! We have eaten it the last 2 evenings and Dustin’s
Dad has declared it to be the best salad he has ever had!! So there you go 🙂
    Thanks so much for sharing!

  1. […] all’amatriciana (will post in the future) and Rob made a strawberry salad he got from their bootcamp instructor. The salad was a near replica of Nicole’s and inspired me to post to clookbook! Cooper (left) […]
