Another great superfood…

Recently I wrote a post about one of my favorite superfoods, Greek yogurt. Another food that I absolutely love is sweet potatoes.

Sweet potatoes have a lot of nutrients, contain more fiber than other potato varieties, and are a good source of beta carotene which is helpful for fighting cancer, heart disease, asthma and rheumatoid arthritis.

If you already cook with potatoes, you can substitue sweet potatoes for just about any other type of potato. Another bonus is that they’re lower on the glycemic index and are a good source of carbohydrates. I love sweet potatoes so much that I don’t eat any other type of potato anymore.

If you’ve only had sweet potatoes topped with marshmallows and brown sugar, I promise that there are healthier and better-tasting ways to each them. Here are some of my favorite ways to eat sweet potatoes:

  • Baked in the oven at 425 for about 45-60 minutes. I actually like to eat them cold the next day with a little olive oil
  • Topped with broccoli and chicken
  • Topped with chili
  • Topped with Greek yogurt and chives
  • Twice baked
  • Sweet potato fries – cut sweet potatoes into wedges, matchsticks, or chips, take in oven at 425 until they reach desired crispness
  • Sweet potato spread
  • As a substitute for any recipe that calls for regular potatoes, including mashed

  1. Yum…my favorite! Usually just eat them mashed or roasted with no additional seasoning because they don’t need it. But I DO like to mash them with a touch of pure maple syrup and a dash of cayenne pepper…delicious!

    Also, I read once that you were stranded on a desert island, that the sweet potato would keep you alive longer than any other singular food. That’s just awesome.

  3. I like to make rosemary sweet potato salad. It’s healthy, and my husband doesn’t crinkle his nose at it 🙂

  4. THis is a new food for me and me and my youngest son love it! We make sweet potato fries. Cut in strips, drizzle with olive oil and some seasonings, i.e., cinnamon, and bake. YUM! He can’t get enough!

    The first time I tried Sweet Potatoes they were great. Now I surf the net for more new ideas for having sweet potatoes. The Cuisine Light Magazines have a few great recipe.

    I even got my husband to eat them which is really great.

    Hi Katie, I haven’t checked in for a while but was so excited to see your article on Sweet Potatoes!!! Of course, I don’t have to tell you how much I love them too, now if I could just get Uncle Mark to like them. I am going to make the Sweet Potato Spread recipe and see how that goes over.
