I’m really confused about what constitutes a healthy fat. I mainly use walnut oil in my cooking because of it’s high omega-3 content. However, it is high in PUFAs, which your video has helped me understand can be bad for me. I keep it in the refrigerator to help keep it stable for longer. Does this make a difference in how bad it is for you? Also, if I’m not supposed to be using much of this oil, then why is it ok to eat walnuts which obviously have a high content of PUFAs too? Is it because they are assumed to be fresher (and therefore the chemical structure would be less likely to have oxidized)?
Also, could you comment on using coconut oil? I’ve heard good and bad about this oil and would like to “hear” a nutritionist’s opinion.

Hi Anna,
Omega 3′s are very susceptible to damage with heat and light because of their chemical structure. So I personally recommend cooking with coconut oil or butter, which are saturated and very stable or cooking. From my research there is a lot of misinformation out there about fats. Many of my clients have to be careful with their nut and seed consumption due to digestive issues and increased PUFA intake. If you are buying nuts and seeds make sure that they are not roasted in the PUFA oils. I cover this topic extensively in my 8 week seminar series. I personally use coconut oil and butter to cook with and olive oil in cold applications. That is all that I recommend to use on a frequent basis.
